This clear brown sauce reflects the traditional japanese cuisine: lightly smoked, slightly tart, woody. This flavour is especially due to loads of bonito flakes which are infused for more than 24 hours in soya, sake and mirin, the most important ingredients of this special sweet and salty sauce.
In Japan, Mentsuyu is mainly used as a noodle sauce or in soups. However, it is so versatile and also very suitable for marinating fish, meat, and vegetables. It is a wonderful dip for Sashimi and can be used as a main ingredient for simmered dishes like Japanese vegetables, fish and meat stews.
